Salsa (the lazy kind)
Into a blender chuck some onions, tomatoes, garlic, chillies, and jalapeños. The consistency should be a lumpy, mushy. Sounds delish, I know, but it is (I promise). Season with salt, pepper, olive oil and coriander. Done!
Grate some strong cheese (I chose edam) and slice some mushrooms. Chop some coriander and your prep is done. Spread tortilla chips all over the plate and cover with cheese and mushrooms. Stick into the microwave until the cheese is melted. Sprinkle over some paprika, coriander, and the salsa. And done. Enjoy x
