Go to the store and buy some focaccia bread. I picked a red pepper and olive focaccia. All you really need then are some veggies (onions, red and yellow peppers) and buffalo mozzarella.
Basically saute the julienned veggies in a little olive oil. Season with salt, pepper, smashed garlic, and rosemary. Add a little dash of balsamic vinegar and once the veggies are softened and caramelized, remove from the pan.
Drizzle a little olive oil over the focaccia and place sliced pieces of mozzarella on top of the focaccia. Lay over all of the veggies as well and then place under the grill until the mozzarella is melted. Remove and slice up, so that everyone can grab a piece.
